Shhhh. Close your eyes. Let’s take a trip back to the endless summers of childhood. You can smell the wet grass from the last hour you spent running through the sprinklers. You hear the ice cream truck jingle off in the distance. Ahhh, pure bliss.

Okay, okay…Back to reality here, folks! We made this recipe to replicate that nostalgic feeling of enjoying a popsicle in the midst of the summer heat. You’re guaranteed to be the coolest neighbor on the block with this one. 

And, it wouldn’t be us if we didn’t dish on the nutritional benefits of this recipe first. Let’s do this!

Not only does this recipe have antioxidants galore thanks to the blueberries, raspberries, and spirulina, but we also made sure to sprinkle in some healthy fats like coconut yogurt and coconut milk for a boost in magnesium, Vitamin D, B12, and calcium. Create

  • Red Layer:
  • White Layer:
    • 1/2 cup coconut yogurt
    • 1/2 cup coconut milk
    • 2 tsp maple syrup
    • 1 tbsp cornstarch or arrowroot powder
    • Juice and zest of 1 small lime
  • Blue Layer:
    • 1 cup blueberries
    • 2 tbsp maple syrup
    • 1/2 cup coconut milk
    • 1 tbsp cornstarch or arrowroot powder
    • 1/2 tsp blue spirulina, optional for more intense blue color

    Directions

    1. Start by blending each layer separately in the blender until smooth and creamy. 
    2. Pour each layer into separate bowls that have a spout for pouring, or pour into a pastry bag. 
    3. Pour the red layer first till 1/3 way and then freeze for about 20 minutes. 
    4. Next pour in the white layer till 1/3 way up and then freeze for about 20 minutes. 
    5. Finally finish with the blue layer. Store the popsicle in the freezer until ready to eat!
