Golden Blueberry Vanilla No-Bake Muffin Balls

Just in time for summer, we give you another no-oven-required recipe: no bake muffin balls.

Our friend Nikki whipped up these bite-sized “muffins” using our delicious golden milk powder.

The golden milk powder not only adds a creamy taste of coconut milk and turmeric but also provides a boost of anti-inflammatory power, with a side of adaptogenic herbs, in every bite.

These golden bites are a breeze to cook up since no actual cooking is involved. All you need are a couple of ingredients and most of which are kitchen staples you probably already have on hand.

Plus, these stay great in the fridge for an easy grab-and-go meal prep idea. Perfect as breakfast bites, a mid-afternoon snack, or as our favorite use case by Nikki: a treat to sneak into the movie theatre!

Don’t act as if you’ve never smuggled snacks in to avoid the $15 popcorn buckets. But now you have a more portable snack idea that fits right into your pocket.

  • Turmeric: The Golden Star

    The star ingredient in this golden milk powder is turmeric!

    What makes this star superfood so golden is its active component, curcumin. Curcumin has been studied extensively for its ability to target and reduce inflammation in the body.[1] Where inflammation has been linked to many chronic diseases, we are all aboard the turmeric trend.

    The main compounds with antioxidant properties are known as flavonoids. Specifically, the group of flavonoids known as anthocyanins is responsible for most of these benefits.[2]

Does anyone else keep enough snacks on them at all times to feed an army? ??‍♀️ I went to the movies last night and literally had balls rolllling out of my sweatshirt pockets, but like if I’m gonna sit to watch a 3 hour movie I gotta be prepared, right?! ? Directions

  1. In one bowl, mash the banana until a smooth texture is formed, add in the remaining wet ingredients (peanut butter, maple syrup) and stir well.
  2. In a separate bowl, mix together the coconut flour, golden milk powder, and plant-based protein powder.
  3. Add the wet ingredients into the powder mix until well-combined.
  4. Fold the blueberries into the mixture.
  5. Roll into balls and refrigerate for 2-3 hours.
